Nectarine Tomato Mozzarella Salad

I love adding fruit to a salad, and nectarines are perfect in the summer. Grilling them, either on the barbecue or in a pan, caramelizes them, enhances their sweetness, and adds depth to the flavor. I like to finish grilling them with a drizzle of high-quality balsamic vinegar, which coats them as they caramelize. Adding tomatoes and mozzarella gives the salad some freshness. Feel free to use whichever tomatoes or mozzarella you prefer or have on hand. If you want to go fancy, buffalo mozzarella or stracciatella would also be nice. Since the salad only has a few ingredients, choosing high-quality products really makes a difference.

I also like to finish it with roasted pine nuts or sunflower seeds and some herbs like basil or mint. I find sunflower seeds to be a great, affordable alternative to pine nuts. While the flavor isn’t exactly the same, considering the difference in price and package size, sunflower seeds are much more convenient for me. Just roast them beforehand to enhance the flavor. You can also add other ingredients to make the salad heartier. Lettuce like arugula or beet leaves works great. Or maybe try some homemade croutons. Whatever you fancy.

This is one of my favorite things to make in the summer. It’s great for lunch, dinner, or a barbecue. I sometimes pair it with bread or roasted potatoes to add some carbs. It’s also a great side for a simple dinner party. Just prepare some other tapas or sides and gather friends or family around your table (see more tips on that here).

Nectarine Tomato Mozzarella Salad

Fresh and simple summer salad. Perfect as a side dish for a dinner party or pair it with some bread for a light lunch.

Ingredients

  • 3-4 nectarines or peaches

  • 3 big tomatoes or 3 handful cherry tomatoes

  • 1 mozzarella or burrata

  • 1 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • Salt

  • Pepper

  • Mint or basil to garnish

  • 1 handful roasted pine nuts, sunflower seeds or nuts of your choice (optional)

Directions

  • Cut the nectarines into slices.
  • Heat up a pan to medium heat and add some olive oil. You can also use a grill here.
  • Roast the nectarines in the pan until they are charred on both sides. Add some good quality balsamic vinegar when they are done to caramelize them and turn off the heat. Let the nectarines cool down a little while you prepare the rest of the salad.
  • Cut the tomatoes in slices and tear the mozzarella apart to create bite sized pieces.
  • Arrange the nectarines, tomatoes and mozzarella in a bowl. Add salt and pepper and drizzle some olive oil on top.
  • Add mint or basil, roasted nuts or seeds if you like. I think this adds a nice texture and balances out the flavors.

Notes

  • Feel free to add something else to the salad. Arugula would be a nice addition. Or if you want to go fancier, you could use buffalo mozzarella, burrata or stracciatella. Maybe you find some fancy tomatoes, that would be great as well.
