An Odd but Delicious Hummus Recipe

You are probably thinking this sounds weird for a hummus recipe. I know I know. It’s definitely not traditional hummus and I was also skeptical when I first heard what’s in this hummus. But it’s so good that I highly recommend trying it.

I discovered this recipe during my trip to Portugal, where I stayed in a surf house run by two lovely Slovenian women. They made breakfast for the whole house every morning, and this hummus was always part of it. My friend loved it so much that they even made a fresh batch just for her. But everyone else loved it too, we couldn’t stop talking about it.

It didn’t taste like traditional hummus when I first tried it, but I didn’t expect peanut butter and pickles to be included. The advantage is though that you only need a few ingredients that you probably already have at home. And they are really cheap.

It’s also a great source of protein, thanks to the chickpeas and peanut putter, and perfect if you are vegan or serving vegans. It’s super easy and quick to make as you just throw all the ingredients in a blender and it’s ready to serve. Perfect as a dip for vegetables like carrots or bell peppers, as a spread on some fresh bread (maybe topped with an egg or some tomatoes) or as a side dish for a dinner party (check out my tips on how throw a dinner party). Feel free to get creative with toppings or spices – maybe you want to add some coriander or paprika?

A slightly odd but delicious recipe for hummus including pickles and peanut butter, giving it a nice tangy flavor. A perfect dip for vegetables or as a spread for bread.

Ingredients

  • 1 can or 140g of cooked chickpeas

  • 40g pickles

  • 2 tbsp pickle juice

  • 1 tbsp peanut butter

  • 1 tbsp olive oil

  • 1/2 tsp garlic powder or crushed garlic

  • 1/2 tsp salt

Directions

  • Add all the ingredients to a small blender or mix with an immersion blender.
  • Add some water or more pickle juice if the consistency is too thick.
  • Serve in a bowl and drizzle with some olive oil or top with some chickpeas.

Notes

  • It’s best to use a small blender or immersion blender here as otherwise it will be hard to get a creamy consistency and fully blend the chickpeas. You can also try it with a smoothie mixer, but that might require more liquid like water or pickle juice.
